Camp Cooking Recipe from a Kayaker
After yesterday's blog of some recipes I got an email from a pair of kayaking friends who wanted to share their favorite camp cooking recipe as well. Here it is, from Birgit Kuhle and Susan Vokey:
Ah, yes - the famous apple recipe - started as part of a meal I cooked on my level 2 PC cert. the other year and morphed into its current form on the Newfoundland trip Birgit and I asst guided on a couple years ago. The non-Newfies in the group (ie everybody else) were astounded at the "cream-in-a-can".
Originally, the apple/cinnamon/brown sugar/marg. mixture was served over slices of plain pound cake with the cream then glopped on top (still a very viable option for earlier in the trip if you have something in which to keep the cake to stop it getting crushed). The current incarnation can be made right at the end of the trip, since the most perishable item is the apples!
I usually use:
1 apple per person (or slightly less, depending on size of apple or person), peeled and sliced
About 1 tbsp margerine, a little sprinkle of cinnamon and a generous couple tbsp brown sugar per apple - enough so that when it all melts together and you chuck the apples in, they get nicely coated with the sauce.
Melt marj, throw in sugar and cinnamon and stir 'til combined, then throw in the apples and cook that together 'til its all warm and yummy-looking - don't burn it!
Meanwhile, give the can of cream (around here, you have Nestles "Thick Cream" in a little can - do NOT get sweetened condensed milk, as it is not the same thing; back home, we had "Fussels Cream" - Newfies can can anything!) to the biggest, burlies paddler there and tell him to shake the h* out of it for about 10 minutes; that will thicken it. Also meanwhile, give the bag of cookies to someone else and have them break them up into small-ish chunks - not"dust", chunks!
Dish the apple mixture into bowls, top with the crushed cookies (I personally like Dad's Oatmeal cookies, but you could use any crunchy oatmeal-type you like; even gingersnaps would be good...) and add a dollop of cream.
Enjoy! Word of warning - one can of cream will serve two VERY generously, three fully and four just about right - any more than that, and you need more cream!
